Chickpeas Focaccia

 

Ingredients

1 can cooked chickpeas
1 can water
½ can extra virgin olive oil
15 gr fresh yeast (summer) 25 gr (winter)
4 1/2 cups all-purpose flour
salt
rosemary

Procedure

Put chickpeas and water into a small pan and warm up until lukewarm. Blend the mixture then put it into a large bowl, add salt and fresh yeast and mix it until all the lumps are gone, stir in the oil then the flour and mix until the dough pulls away from the side of the bowl. Cover with cling film and let it rise until it has doubled in size. About 1 ½ hour.Spread the doubled dough into a baking tray, then sprinkle the rosemary and a pinch of salt on top.Bake in the preheated oven (180°C/350°F) until golden, about 25/30 minutes.
